Sams & Coffee opens in Spokane Valley

Jacob Miller has opened a new coffee and sandwich shop named Sams & Coffee, at 12709 E. Mirabeau Parkway, in Spokane Valley.

Miller, who also owns the downtown sports bar Crave Eats.Drinks.Nightlife., says he was looking to start a slightly different kind of business.

“I wanted to diversify a little bit, see what other options there were in this market,” he says. “I found this location and wanted to bring something to it that I felt this area needed.”

Miller says the shop offers an assortment of breakfast and lunch sandwiches, a full-service espresso bar, and a selection of canned and bottled beers. The restaurant also offers some local catering for area businesses.

“We call it Sams, because my middle name is Sam,” he says. “We opted not to use the apostrophe, so as not to confuse it with other local businesses and so it could also stand for ‘samwich,’ like sandwich and coffee.” 

Miller is leasing the location, which includes a 1,680-square-foot-interior space and a 700-square-foot patio. He says the interior was built to suit by Divcon Inc., of Spokane Valley.

“We have three employees right now, some of whom also work at Crave downtown,” he says. “We’re just getting started, but I’d love to see this business expand into multiple other locations one day.”
