Kagen Coffee & Crepes opens on North Side

Tri-Cities couple Kagen and Jennifer Cox recently opened Kagen Coffee & Crepes in a 1,500-square-foot location formerly occupied by a Starbucks coffee shop, at 915 E. Hawthorne Road, on the north edge of Spokane.

The Kagan Coffee & Crepes’ parent company, The Crepe Shop LLC, is headquartered in Richland, where the couple opened their first two restaurants, one of which currently is closed due to pandemic-related restrictions.

Kagen Cox says the couple believes Spokane would be a strong market for the Kagan Coffee & Crepes concept since they opened their first restaurant.

Crepes have always been regarded as a food appropriately suited for a sit-down, dine-in café experience, he says.

“Our goal is to showcase the speed and quality with which they can be prepared for take out,” Cox says.

In addition to traditional crepe recipes, Kagen Coffee & Crepes has made a bit of a name for itself in the Tri-Cities for its other nonconventional crepe creations, he claims.

The Monte Cristo, for example, is loaded with an egg, ham, turkey, and cheddar and provolone cheeses rolled in a crepe, sprinkled with powdered sugar.

Another offering is the All-American, which features a crepe filled with an egg, cheddar cheese, bacon, and Kagen’s homemade sausage-based gravy.

“We’re proud to say we’ve been called a full-functioning restaurant that happens to be in a coffee shop,” he says.

Kagan Coffee & Crepes in Spokane currently has eight employees, and once dine-in restrictions due to COVID-19 are relaxed, he anticipates the restaurant will double its employees.
